You Burdock Make This Macro Meal!
Whoa, what a week! Apologies for not keeping you updated, I’ve been a busy little chef who has hardly been home… Aside from assisting one of my school’s amazing public classes: ‘The Art of Tofu’, I have been working with my classmates on our upcoming Friday Night Dinner extravaganza (in between all the other cooking and learning of course!). Right now, every waking moment is spent testing, tweaking and refining our delicious health-supportive menu, which leads me to say….if you’re in New York on Friday 25th September, please come and dine with us! I’ve shared a few pics below to give you a glimpse into other parts of my week. On the way to school, I always stop off at the Union Square Greenmarket – why? Because I LOVE food (well duh!) but am also sourcing quality, local and organic ingredients to recipe-test for a very exciting ‘to-be-announced-soon’ project I’m working on post my Natural Gourmet Institute study. As per usual, I was spoilt for choice at the markets…
This week at school, I also learnt all about macrobiotic foods and cooked up some ridiculously healthy and tasty dishes. What is it like eating macrobiotically? Truthfully, I have never felt so good, full of energy and happy with my digestion! No wonder so many healthy A-listers have chosen the macrobiotic route – the meals are clean, seasonal, local and oh so delicious…a truly inspirational lifestyle, one that has piqued my interest enough to delve deeper to learn more.
Signing off now to attend a 9/11 tribute ceremony. Living here in New York, I cannot fathom what it would have been like that fateful day when so many innocent lives were lost. Many of my beautiful classmates were here and shared their personal accounts of what they experienced that day. Just so sad. Its anniversaries like this that make me cuddle those around me a little tighter, and remember to be thankful for every single day I live on this wonderous planet.

Beautiful Burdock Salad
(A Natural Gourmet Institute recipe)
Servings: about 2-4 side servings depending upon portion size
- 2 Tbs sesame oil (or you can use coconut)
- 4 oz/125g burdock root, shredded into thin strips
- 4 oz/125g parsnip, shredded into thin strips
- 6 oz/170g onion (1 medium), sliced thinly
- 8 oz/230g carrot (1 medium), sliced thinly
- Pinch of celtic or himalayan sea salt
- 2-3 Tbs soy sauce (or gluten free tamari)
