- 5 stalks of celery
- 1 small cucumber,
- 1 pinkie finger-sized piece of fresh ginger, and

Indulging in my usual healthy breakfast, sipping slowly after a satisfying yoga practice. Both yoga and the smoothie set me up for a day full of energy and contentment which I’m going to need because it’s all about bread making and baking today at school!
I can’t wait to learn how to make immune supportive scones, pancakes, waffles and crepes, all items I would normally avoid because they are super hard to healthify without proper professional guidance and technique. I have lost count of how many times I have tasted, rock-hard, dense or chewy ‘healthy’ scones….ugh! Super excited for what today will bring.
Oh! And if you’re wanting to try what I’m drinking this morning, simply blend:
- 1 cup coconut milk (healthy fats)
- handful of spinach (nutrients, AKA, skin food!)
- 1 tsp cinnamon (to stabilise blood sugar levels)
- 1/2 cup blueberries (carbs)
- 1tsp roobios tea leaves (vitamins, minerals)
- 1/4 medium cucumber (hydration)
- 1/4 cup firm tofu (protein)

I love smoothies.
They are easy to make, incredibly convenient and such a brilliant way to pack in as much plant matter and vegetables as you can first thing in the morning. I became a fan of smoothies back in my modelling days when I had no time to eat due to auditions and jobs often located on different sides of town. My options were limited to: not eating at all (which I did for a period of time but it wasn’t for me!), eat something from a packet, or ‘make and take’ my own food.
I decided to try my hand at creating something healthy, delicious and compact. I wanted something that wouldn’t make me feel or look bloated, but it had to fill me up and make me feel satisfied. Oh! And it also had to fit neatly in my handbag to be easily eaten on the run.
What I came up with was a soup-like green gunge…after blending my ingredients, I took one look and almost tipped it down the kitchen sink. Thank goodness I decided to give it a try! It looked really green, smelt a little grassy but the taste…oh my YUM! Continue Reading…
