‘You Beauty’ Braised Brussel Sprouts

Brussel sprout haters, LISTEN UP!
.
This dish was just given the thumbs up by a VERY picky eater 
.
Last year, I was enlisted by a private client to create delicious, nutritious meals using "anything but green vegetables."
.
When I delved further (because WTF?!) I was told her seven-year-old son had a strong aversion to foods coloured green 
.
Long story short, no matter what she tried over the years (even dying broccoli & celery purple!) he wouldn't swallow a morsel ‍♂️
.
Out of sheer desperation, she began looking for someone to help - enter ME!
.
So far, in the last 2 months, this little boy has embraced: zucchini, broccoli, celery & spinach.
.
Today, however, was the BEST DAY EVER because I just got the call to say he declared he LOVES CHEF SHINE'S BRUSSEL SPROUTS!
.

.
To say I'm thrilled would be an understatement - I feel as though I've won the lottery.
.
And because I'm on such a natural foods high, I jumped on insta to share this recipe with you, perfect as a side or snack on its own.
.
Obvs, you know how great Brussels are, but just in case:
.
They were initially bred from wild cabbage to improve digestion.
.
Full of vitamins, antioxidants & naturally-occurring sulphur, essential to the functioning of your cardiovascular, muscular & central nervous system.
.
Naturally anti-inflammatory thanks to their glucosinolate & Vitamin K
.
'You Beauty' Brussel Sprouts 
.
You need:
.
✨500g/1lb brussels sprouts, shaved
.
✨1 organic apple, grated
.
✨1/4 cup dried, organic currants
.
✨2-4 tbs extra virgin olive oil
.
✨3 tbs lemon juice
.
✨1 tsp garlic powder
.
✨1 tablespoon pure date syrup (I used @thedatelady)
.
✨½ teaspoon sea salt
.
For plant-based parmesan:
.
¼ cup shelled pumpkin seeds
.
1/4 cup nutritional yeast
.
1/4 tsp sea salt
.
You do:
.
‍Blitz seeds, yeast & salt in a processor. Pulverise & set aside.
.
‍Saute brussels & apple in oil & salt until wilted. Turn off heat & mix in all other ingredients.
.
‍Toss to combine & serve topped with plant-based parmesan (optional).
.

How to Protect Yo’self From EMF

A few years ago I began delving deeper into different types of detrimental toxicities that exist within our environment because I'm a health nerd who wants to know anything & everything about how to guard & support the body naturally.
.
Aside from natural food & skincare, what do I know? 
.
That EMFs encompass areas of energy surrounding all electronic devices. Their electromagnetic fields affect you (and me) because our bodies have their own electric & biochemical responses - our nervous system, digestion brain function, heart function, etc.
.
In the last 3 years, I've spoken to many experts who tell me EMFs can & do interact with the body in lots of not-so-great ways causing: headaches, anxiety, nausea, depression, fatigue, loss of libido as well as more serious health issues involving degeneration of cells leading to very serious dis-ease in the body 
.
So what can you do about it?
.
Protect yo'self of course!
.
⚡️Eat a real food diet - LOTS of greens containing 'chlorophyll' which cleanses, detoxifies, purifies & supports the body. Take a look at my insta feed and You Tube tube channel for LOTS of great recipes.
.
⚡️Drink filtered water, health supportive tonics & elixirs as well as my fav: detoxifying teas! My current love, pictured above, is Pau d'Arco. My friend Mason from @superfeast tells me this herb has been used for years to relieve pain & treat conditions including yeast overgrowth, fungal infections & skin rashes. Aside from its detoxing power, Pau d'Arco tea can also support the body to heal chronic digestive disturbances.
.
⚡️Seek out products that block harmful laptop and phone radiation like my @defendershield mat pictured above. This mat also greatly reduces heat emitted from laptops, tablets & other electronic devices. Whenever I'm working, I make sure my Defender Pad is placed between my laptop and my body.
.
⚡️Invest in a crystal because they're not just beautiful specimens, they're health supportive too! Whether you're a little woo woo like me or not, there's no disputing the fact crystals like shungite can help support the body. Shungite is the only natural material containing 'fullerenes' which are SUPER high in antioxidants

Magical Matcha Chocolate Truffles

As promised in Friday's post (& with permission from @amylevin_ ) here is THE recipe of all recipes: Amy's (to-die-for) matcha chocolate truffles 
.
Things to note:
.
You can replace lemon juice with any citrus, eg: lime or orange.
.
Using xylitol or honey will keep the recipe light & bright. If you use maple or coconut sugar, it’ll have a darker flavour to it & may not highlight the delicateness of the matcha as much.
.
These don’t need to be enrobed, you can just roll them in matcha, cacao powder or ground pistachios.
.
Amy used Matcha Gold from @lalaniandco, but just use the highest quality you can afford.
.
You need:
.
70g (¼ cup) coconut butter
.
200g (1 cup) water, hot/warm
.
150g (4 oz) cacao paste, baking chocolate or your favourite chocolate – shaved
.
100g (½ cup) xylitol or coconut sugar
.
2 tsp lemon juice
.
1 tsp matcha powder
.
½ tsp vanilla powder
.
1 tsp tamari (optional for added depth)
.
You do:
.
It’s important water is warm/hot & chocolate is shaved before  starting beginning.
.
The liquid being hot & the chocolate being shaved will mean the mixture melts very quickly & can properly emulsify in blender.
.
Combine all ingredients in a high speed blender & process, starting on low-medium, then increase to full power until all ingredients are smooth & creamy.
.
Pour contents into a large bowl so ganache sets quickly. If bowl is tall & narrow, it will take longer for the mix to set. Create as much surface area as possible for faster setting.
.
Leave mix uncovered at room temp until completely cooled. Wrap with plastic wrap, or transfer to a container & place in fridge for a few hours to set completely.
.
Once set, dust hands with a little cacao powder & roll mix into small balls.
.
Don’t use too much cacao powder or chocolate won’t stick to them when you enrobe them. Alternatively, dust them in matcha & call it a day!
.
To enrobe, place back in the fridge to set again while you get chocolate ready. Garnish with chopped pistachios nuts or simply roll in matcha powder.
.

Countdown to #Revitalise2016

Don’t Quit Sugar!

SHUGUH! 🌟 Not as bad as you would think – yes, I still think the highly processed white stuff is the devil 😈 but I since becoming a Natural Foods Chef, I have learnt SO many new things about other, natural varieties you can use to sweeten it up! Bottom line: keep it real, raw and organic. And try to use it in minimal amounts ’cause you’re sweet enough already!!

Some of my fav ‘shuguhs’ to use include: 100% organic maple crystals, coconut crystals, organic brown sugar: I avoid anything white or highly processed, made from weird stuff that doesn’t seem ‘right’. Go with your gut – you know what works for you and what doesn’t! 😘
