SPICED PUMPKIN SEEDS

There's this misconception that if you do what you love, you never feel like you're really 'working'... I call 'total myth!' on that, & wanted to share this with you: you can totally do what you love each day & still feel utterly exhausted most days 
.
Since I've been evolving in my role as a wellness educator, I've found that because I REALLY love what I do now, I'm often VERY tired at the end of the day.
.
It's definitely a different kind of tired though - the kind that takes over after spending the day pursuing & feeling passionate about what you're doing & what you want to achieve 
.
In my previous media career, my tiredness was permanently intense, constantly mixed with feelings of stress, sadness & anxiety ‍♀️
.
Nowadays, my tiredness is pure tiredness - the kind that hits after a long, productive day of connection & creativity ✨
.
If any of this makes sense, let this be a reminder to look after YOU!
.
No matter how busy you are:
.
✨Stop, stretch & get outside to soak up some Vitamin D
.
✨Take time to check you are breathing properly!
.
✨Pre-prep food! Create simple recipes like the one below...
.
SPICED PUMPKIN SEEDS
.
✔️2 tsp olive oil
.
✔️2 tbs maple or date syrup
.
✔️1 tbs apple cider vinegar (I love to use @hilbilbyculturedfood fire tonic)
.
✔️1/4 tsp cumin
.
✔️1/4 tsp garlic
.
✔️1/4 tsp cayenne
.
✔️1 cup raw pumpkin seeds
.
You do:
.
Preheat oven, 350F/150C. Line a baking tray.
.
Combine ingredients (except for
seeds) in a bowl, whisk to combine.
Add pumpkin seeds & leave to soak for 10 mins.
.
Scatter out onto a baking tray - can be touching, just not in piles on top of each other.
.
Bake for 10 mins, remove & mix around with a fork.
.
Pop back into the oven, roast further for another 10-25 mins or until seeds have turned golden brown.
.
Remove & leave to cool completely - do not disturb until completely cooled.
.
Store in an air-tight container & carry with you everyday! GREAT source of protein, iron and zinc

I am beyond excited to share this post with you – my very FIRST post for Kris Carr! I admire this strong, resilient beacon of light so much… Kris was the very first person to inspire me to look at illness as a challenge, not a life sentence. In many ways, my healing came thick & fast once I decided not to be a victim to my illness.

Gluten Free Zucchini Bread

Well hello there Friday, it's lovely to see you! 
.
To celebrate, here's a yumtastic recipe I first created for a client wanting a healthy vegan version of the more traditional zucchini bread (minus the animal-based ingredients) to snack on.
.
Aside from it being gluten and egg free, this lovely loaf is PACKED with all kinds of real food stars like zucchini, organic apple puree and flaxseed 
.
All perfect poop-forming ingredients to keep your body in tip top shape 
.
If you've never tried flaxseed before, do it, do it! It's filled with healthy fats and functions as an effective little vacuum cleaner as it moves through your digestive tract.
.
This recipe is best enjoyed with someone you love because food and friendship = LIFE 
.
Have a great weekend, and don't forget to cook with love because it's the best, most health-supportive ingredient!

EASY PEASY PLANT BASED ZUCCHINI BREAD
.
You need:
.
4 tablespoons flaxseed + 12 tablespoons water - mixed and left to thicken
.
4 cups packed zucchini, grated
.
3 cups gluten free flour blend (see my insta for past recipes or use organic, store-bought kind).
.
1.5 cups organic apple puree (or boil 1-2 small apples & puree)
.
3/4 cup organic nut or seeds of choice - you can also sub for dried fruit
.
1 cup raw, organic coconut, cane or maple crystals
.
1 tablespoon organic vanilla extract
.
3 teaspoons aluminium-free baking powder
.
1 teaspoon baking soda
.
1 & 1/4 teaspoon true cinnamon.
1/2 teaspoon sea salt
.
You do:
.
✨Preheat oven to 180C/350F. Line or grease one large loaf tin.
.
✨In a large bowl, combine applesauce, crystals and vanilla. Stir in the flax “eggs” and shredded zucchini.
.
✨In a second bowl, combine flour, baking powder, baking soda, cinnamon and salt. .
✨Add dry ingredients into wet and stir well to combine. Lastly, fold in nuts/seed/dried fruit.
.
✨Pour batter into loaf pan and smooth on top. Bake for 45-60 minutes or until a cake/bbq skewer comes out clean and your loaf turns a nice golden brown colour.
.
✨Leave to cool on a wire rack before slicing (drooling) and enjoying!

Throughout the chat, Kristen asked me to share my thoughts and advice - words I'd say to my younger self, as well as things I want people to know now...

On reflection, everything I said stemmed from 'you can' 
.
Whether it be healing your body, starting a new relationship with yourself (or others) or learning how to truly love and honour yourself - whatever your own challenges may be...I want you to know YOU CAN

Easy Peasy Tomato Crisps

Snacking on the go as I flit between multiple appointments before @benjaminshinestudio and I head to France next week 
.
Whenever I'm out for a full day, I pack multiple provisions: green juices, seed crackers and real food treats like THIS: my delicious dried tomatoes first soaked in @hilbilbyculturedfood Fire Tonic before being dehydrated to a fine crisp 
.
I stored them in a reusable tub used to house dehydrated tomatoes purchased during my visit to Byron Bay last month - they actually inspired me to start making my own again 
.
BYW, I'm a HUGE fan of recycling plastics because: necessary evil when you're out and about!
.
Whether you have a dehydrator or not, you can totally make these babies yourself - all you need is an oven on its lowest setting, door ajar. Sure, it takes a lot longer, but unless you're a foodie fanatic like me (and creating innovative food is part of your livelihood and passion) dehydrators aren't really classified as a necessary kitchen item.
.
However, if you DO have a dehydrator, follow the simple steps below...
.
You need:
.
Firm tomatoes (I like to use Romas but any tomato will work)
.
Dried basil, oregano and garlic
.
Organic Apple Cider Vinegar
.
You do:
.
Wash tomatoes & cut off tops. Slice into 1/4″ pieces.
.
Place into a shallow bowl filled with Apple cider vinegar and soak for up to 3 hours - or overnight for full flavour.
.
Place slices onto dehydrator trays and sprinkle with dried herbs.
.
Dehydrate at 58-60C (135-140F) for at least 8-10 hours, or longer if you want them to be super duper crisp!
.
Remove from trays and store in an air-tight container. These are great to snack on and/or thrown into salads and stir fries

Brrrr, it’s getting cold here in Oz…but I’m not complaining, no way! I’m excited because it’s a wonderful excuse to increase my soup consumption, YUM!! Whether it’s hot or cold where you are, this soup is a good’un because it provides a great dose of plant protein, about 6g per serve (2 cups).
