Superfood Carrots


Introducing my current veggie fixation…these beautiful rainbow carrots – each colour providing different health benefits to my body:

 Orange = high levels of beta carotene, a precursor to Vitamin A.
 Purple = beta carotene and anthocyanins that can yield twice the antioxidant power of vitamin C!
 Yellow = Xanthophykks and lutein which have both been linked to cancer prevention and improved eye health.
White = health-supportive nutrients housed in its healthy fibre.
Red = beta-carotene and Lycopene which is linked lowering the risk of prostate cancer.

And the best way to eat them if you can’t digest them in their raw form?

Superfood Carrots
Recipe type: Savoury Snacks,Plant-Based,Paleo,Quick and Easy
  1. Give them a good scrub, with the skin ON - more nutrients this way!
  2. Mix them together with a 'glug' of extra virgin olive oil + a sprinkle of iodised sea salt for added goodness!
  3. Pop them on a lined baking tray and roast for about 10 - 15 mins in an oven at 200C/400F.
  4. Remove and devour 'as is' or as a side to your main meal
