Vegan Chocolate Truffles

  • 3 tbs coconut butter
  • 2 tbs virgin coconut oil, melted
  • 2 tbs soft nut or seed butter - I used almond
  • 3 tbs cacao powder
  • 1 tbs @superfeast He Shou Wu
  • 2 tbs maple syrup
  • ½ tsp vanilla extract
  • ½ tsp mint extract OR 1-2 drops food grade peppermint oil
  • Pinch sea salt
  • 1 tbs cacao nibs
  1. Combine butter, oil, syrup and vanilla - mix well
  2. Add nut butter, stir.
  3. Add cacao, He Shou Wu and salt. Mix well.
  4. Add mint extract/oil and cacao nibs, then place mixture in the fridge to harden for at least 30 mins.
  5. Remove from fridge, roll into balls. Coat in extra cacao powder, almond meal, free-dried druit powder, beetroot powder or more cacao nibs & ENJOY!
