Vegan Chocolate Truffles

- 3 tbs coconut butter
- 2 tbs virgin coconut oil, melted
- 2 tbs soft nut or seed butter - I used almond
- 3 tbs cacao powder
- 1 tbs @superfeast He Shou Wu
- 2 tbs maple syrup
- ½ tsp vanilla extract
- ½ tsp mint extract OR 1-2 drops food grade peppermint oil
- Pinch sea salt
- 1 tbs cacao nibs
- Combine butter, oil, syrup and vanilla - mix well
- Add nut butter, stir.
- Add cacao, He Shou Wu and salt. Mix well.
- Add mint extract/oil and cacao nibs, then place mixture in the fridge to harden for at least 30 mins.
- Remove from fridge, roll into balls. Coat in extra cacao powder, almond meal, free-dried druit powder, beetroot powder or more cacao nibs & ENJOY!
