Mango & Peach Salsa

  • 2 mangos, peeled & chopped
  • 2 peaches, peeled & chopped
  • 1 medium brown onion, diced
  • 1 medium sweet tomato, halved
  • 2 cloves garlic
  • 2 tbsp fresh mint
  • 2 tbsp fresh basil
  • Fresh juice of one lime
  • Sea salt (to taste)
  1. Pulse process all ingredients in a food processor - use the pulse mode because you want to create thick, juicy salsa chunks, rather than a smooth, blended batch of mush...
  2. Cool the salsa in the fridge before serving as a side to a main meal - or even as a snack with my flax crackers (available on my blog).
  3. Garnish with extra basil and mint leaves for presentation. Add extra sea salt and lime juice to taste 🌱👌🏻🙏🏻
