It’s a quick brunch for me today, LOADS to do before my beloved and I head to New York 🙌🏻 what am I eating today? Simple, easy and delicious food including…

🌱Steamed kale for a great dose of protein and Vitamin K.

🌱British Round lettuce, because I like incorporate a little raw food into my diet.

🌱 Sautéed onion that was leftover from last night – did you know onion is a fantastic prebiotic for your gut? Truth!

Just waiting on my chickpeas to boil – I soaked them from raw overnight, now just boiling them up so I can add about 1/2 cup to this mix 👌🏻👌🏻👌🏻 Finishing everything off with this yummy dressing I made to add healthy fats:

💫1/2 cup extra virgin olive oil

💫1/4 cup balsamic

💫1 tablespoon mint

💫1 tablespoon basil

💫2 teaspoons Rosemary 🍴

Shake and serve immediately – I use about 3 tablespoons of this mix in a single serving.
