Chocolate Coconut Bounty Bars

Happy holidays to YOU! To celebrate, I want to share a delicious treat you can make for any occasion – particularly perfect if you’re looking for a healthier way to indulge this Easter… 🍫🍬 There’s loads of yummy chocolate cake recipes here and here but who wants cake when you can make your own chocolate coconut bars that taste really naughty (even though they’re really health supporty… 😆).

Ok, I’m not so great when it comes to rhyming BUT I make up for it in cooking!! 🏻So without further ado, here’s a fantastic recipe just for YOU (and maybe some people you care about IF they’ve been good!) this easter…

Chocolate Coconut Bounty Bars

You need:

  • 1 cup sulphate-free desiccated coconut
  • 1/4 cup full fat coconut milk
  • 1/4 cup coconut butter (melted) OR you can use coconut cream
  • 2 tablespoons maple syrup, agave OR raw honey
  • 1.5 tablespoons extra virgin coconut oil
  • Pinch of sea salt

You do:

  1. Mix all ingredients together and pour into a lined slice tin or container. Freeze for at least 30 minutes to set the coconut mix properly – they should be quite hard. 
  2. Once ready, dip in the chocolate recipe (below) – I use two forks to do this, then place each chocolate-covered coconut bar on a lined baking tray before placing back in the fridge/ freezer to set (these set faster in the freezer but you’ll get a more professional chocolate look if they set slower in the fridge). 

Homemade chocolate:

You need:

  • 1/2 cup nut butter of your choice (almond butter works really well)
  • 1/2 cup cacao, carob OR cocoa powder
  • 1/2 cup coconut oil
  • 2 tablespoons maple syrup, agave OR raw honey
