There’s really nothing like stewed pears roasted with a little coconut sugar and spices to warm your insides and soothe the digestive system! 🍐😋 It’s a little chilly here in London, I’ve been back for a few days now and all I want to do is bake! If you want to make this too, it’s SO easy!
- Chop 3 large pears and stew them in a little shallow water for 8 mins along with…
- 1/4 cup coconut sugar
- 2 teaspoons cinnamon, 1 teaspoon cardamom, 1 teaspoon nutmeg and 1 teaspoon cloves.
- Transfer to baking baking dish and bake for 10 mins in a 200C/400F oven.
- Remove and serve warm (about 3-4 portions) with a big ol’ dollop of coconut yoghurt (You can also use goat’s milk yoghurt or full fat greek yoghurt if you do dairy).
This is super yummy hot or cold depending upon the season. Store leftovers in an airtight container (glass is best) in the fridge. Enjoy! 🍴😋👌
