Oh So Many Ways to Plate!

Today was a GREAT day – the beginning of the end, or should I say the very first day of recipe testing for our Friday Night Dinner final meal. What is Friday Night Dinner? According to the Natural Gourmet Institute:

“…we set the tables, light the candles and put our chefs to work creating a family dinner like no other in New York City…”

In other words, culinary students like me work extremely hard to create a delicious dairy free, processed sugar free, health-supportive, vegetarian three course meal using only organic, local, seasonal, fresh and traditional ingredients. Each week features a different menu and come Friday 25th September, my chef-in-training classmates and I will be cooking and presenting our food to friends, family and (paying) members of the public, eeeeeeeek!

To say we’re all excited is an understatement. And today marked the first day of recipe testing the main meal, AKA, the ‘Entree’ dish. Each of us had our own elements of the dish to prepare and cook, we all worked really well together to create a cohesive, colourful, flavourful dish. What you see below is the same meal plated 8 different ways. We haven’t decided on the final style yet, but we did narrow it down to our top three…

Plating is such a fun part of the cooking process. As a professional chef, this is the moment to really please your customer, to make the food ‘sing’. We humans feast with our eyes before we even touch our knives and forks, so I believe food, plated well, should make you salivate. So let your saliva do the talking…which one of these dishes makes you drool the most?

    Wow! You are all very inspiring chefs to create eight beautifully presented versions of the same food.
    I like the second, third and sixth ones – the first and last plates are wonderful but doesn’t really look like enough food compared to the others. I would love to come for dinner to your restaurant and eat this, but it would be an expensive dinner if I did (I live in Australia!!!!!!). I wish you all the best.

      Thanks for your feedback Katie, much appreciated! We were definitely debating the amount of food to plate yesterday – we want to it look beautiful, yes, but not at the sacrifice of our diner’s stomachs! We would love you to join us for dinner that night, but yes, it would be an expensive meal indeed if you were to come all the way from Australia. Never mind, once the dinner is over I might ask the group whether they would let me share this main meal recipe so you too can taste this amazingness

    Bella Chef Shine! I love your blog and everything you create. I met you recently and think you are just as you type – warm and friendly. My favourite dishes are 1, 7 and 8. I think I might have to come to that dinner to see (and taste) the winner!! How do I reserve a table? Thanks, Sol
